Double Dumplings

8 oz. drained, mashed tofu

2 large eggs

2 teaspoons baking powder

2 tbsp. chopped parsley or chives

2 tablespoons wheat germ

2 tablespoons Lewis Labs Brewer's Yeast™ Flakes

3 oz. whole wheat flour

 

Place all ingredients in a bowl and beat together until smooth. Take a large teaspoon of the mixture and form into a small ball. Drop into simmering soup. Cover and simmer for 15‑20 minutes.

Makes approximately 10 dumplings.
