Minestrone Plus

16 oz. lean minced beef
2 cloves garlic, minced
1 large onion, finely chopped
1 tablespoon Lewis Labs Brewer's Yeast™ Flakes
1 28 oz. can chopped tomatoes
1/4 pint beef stock
8 oz. uncooked macaroni
1 medium courgette chopped
8 oz. carrots, thinly sliced
8 oz. sweet com
16 oz. kidney beans
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon dried thyme
1/4 pint dry red wine
salt and pepper to taste

Topping
1 tablespoon grated parmesan cheese 
1 tablespoon Lewis Labs Brewer's Yeast™ Flakes
 
In a large saucepan, brown the beef and cook the garlic and onion until soft. Sprinkle with Lewis Labs Brewer's Yeast™ Flakes.
Add tomatoes and bring to a boil. Reduce heat and simmer for 15 minutes.
Add stock and return to a boil.
Add macaroni and cook over low heat for 10 min­utes.
Add the courgettes, sweet corn, carrots, Kidney beans, herbs and wine. Cover and simmer for 10 minutes.
Season to taste.
Sprinkle with cheese and Lewis Labs Brewer's Yeast™ Flakes before serving.
