Curried Chicken With Rice

1 tablespoon oil

1 onion, chopped

1 clove garlic, crushed

8 oz. long grain rice

1 pint chicken stock

1/2 teaspoon chili powder

4 tablespoons Lewis Labs Brewer's Yeast™ Flakes

1 green pepper, chopped

2 oz. sultanas

2 oz. peanuts

8 oz. cooked chicken, chopped

Salt and pepper to taste

Heat the oil in a saucepan and cook the garlic and onion un­til softened. Add the rice and cook, stirring until golden. Add the stock, chili powder, Lewis Labs Brewer's Yeast™ Flakes, green pepper and sultanas. Bring to boil, stir once then cover. Simmer gently for 15 minutes. Stir in the peanuts, chicken, salt and pepper. Cover and cook for an additional 10‑15 min. or until the rice is tender and licitly is absorbed.

Serves four.
