Apple Sauce

One Minute Apple Sauce

8 oz. Frozen strawberries

8 oz. Diced sweet apples

1 tablespoon Lewis Labs Brewer's Yeast™ Flakes, plain or toasted  

1 oz. teaspoon cinnamon

2 tablespoons apple juice

 

Drain berries. Combine with apples. Place fruit in a blender and puree. Add Lewis Labs Brewer's Yeast™ Flakes and cinnamon.

Stir in apple, berries, banana instead of apple.


Golden Gravy

2 oz. Lewis Labs Brewer's Yeast™ Flakes

1 oz. whole grain flour

2 tablespoons oil

1/2 pint water

2‑3 tablespoons soy sauce

1/4 teaspoon black pepper

 

Toast the Lewis Labs Brewer's Yeast™ Flakes and flour. Add the oil and whisk while it bubbles and turns golden brown. Add water, still stirring, until it thickens. Stir in soy sauce and pepper.

Makes approximately 1/2 pint.

Variation: Stir in sautéed onions or mushrooms.


Curried Chicken With Rice

1 tablespoon oil

1 onion, chopped

1 clove garlic, crushed

8 oz. long grain rice

1 pint chicken stock

1/2 teaspoon chili powder

4 tablespoons Lewis Labs Brewer's Yeast™ Flakes

1 green pepper, chopped

2 oz. sultanas

2 oz. peanuts

8 oz. cooked chicken, chopped

Salt and pepper to taste

Heat the oil in a saucepan and cook the garlic and onion un­til softened. Add the rice and cook, stirring until golden. Add the stock, chili powder, Lewis Labs Brewer's Yeast™ Flakes, green pepper and sultanas. Bring to boil, stir once then cover. Simmer gently for 15 minutes. Stir in the peanuts, chicken, salt and pepper. Cover and cook for an additional 10‑15 min. or until the rice is tender and licitly is absorbed.

Serves four.


Stuffed Peppers

4 red peppers
12 oz. sausage meat
1 small onion, finely chopped
2 cloves garlic, minced
2 tablespoons Lewis Labs Brewer's Yeast™ Flakes
1/2 dried basil or oregano
1 1/2 lb. cooked brown rice
2 eggs, lightly beaten
3/4 pint tomato juice

Topping
2 oz. grated cheddar cheese 
1 tablespoon Lewis Labs Brewer's Yeast™ Flakes


Steam peppers for 6 to 8 minutes to soften.
Brown sausage onion and garlic in a frying pan, draining excess oil. Combine meat with herbs, rice, yeast and egg. Spoon into pepper shells and place in shallow casserole dish. Spoon tomato juice around peppers, cover and bake for 20 minutes at 350 degrees. Uncover, baste with tomato juice, sprinkle cheese and Lewis Labs Brewer's Yeast™ Flakes over the top. Reduce heat to 300 degrees. Bake for an additional 10 minutes.
Serves 4.


Minestrone Plus

16 oz. lean minced beef
2 cloves garlic, minced
1 large onion, finely chopped
1 tablespoon Lewis Labs Brewer's Yeast™ Flakes
1 28 oz. can chopped tomatoes
1/4 pint beef stock
8 oz. uncooked macaroni
1 medium courgette chopped
8 oz. carrots, thinly sliced
8 oz. sweet com
16 oz. kidney beans
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon dried thyme
1/4 pint dry red wine
salt and pepper to taste

Topping
1 tablespoon grated parmesan cheese 
1 tablespoon Lewis Labs Brewer's Yeast™ Flakes
 
In a large saucepan, brown the beef and cook the garlic and onion until soft. Sprinkle with Lewis Labs Brewer's Yeast™ Flakes.
Add tomatoes and bring to a boil. Reduce heat and simmer for 15 minutes.
Add stock and return to a boil.
Add macaroni and cook over low heat for 10 min­utes.
Add the courgettes, sweet corn, carrots, Kidney beans, herbs and wine. Cover and simmer for 10 minutes.
Season to taste.
Sprinkle with cheese and Lewis Labs Brewer's Yeast™ Flakes before serving.
Serves 6.

Chickpea Burgers

16 oz. cooked mashed and drained chickpeas
2 garlic cloves, crushed
1 egg, beaten
2 tablespoons Lewis Labs Brewer's Yeast™ Flakes
1/4 teaspoon coriander
1 tablespoon soft breadcrumbs
1/2 teaspoon cumin
1/4 teaspoon black pepper, turmeric
2 tablespoon minced parsley
1/4 teaspoon cayenne pepper
1 tablespoon crisp bread crumbs (for rolling)
 

Mix all the ingredients together. 

Chill, then shape into 1" bars.
Roll in the breadcrumbs.
Fry or grill until golden brown (approximately 5 minutes on each side).
Serve with tomato sauce or "golden gravy" (see recipe).

Serves four. Note: burgers freeze well before or after cooking.


Double Dumplings

8 oz. drained, mashed tofu

2 large eggs

2 teaspoons baking powder

2 tbsp. chopped parsley or chives

2 tablespoons wheat germ

2 tablespoons Lewis Labs Brewer's Yeast™ Flakes

3 oz. whole wheat flour

 

Place all ingredients in a bowl and beat together until smooth. Take a large teaspoon of the mixture and form into a small ball. Drop into simmering soup. Cover and simmer for 15‑20 minutes.

Makes approximately 10 dumplings.


Vegetable Soup

1/2 chopped onion

2 cloves garlic, crushed

2 stalks celery, chopped

1 carrot, grated

2 tablespoons oil or butter

1/2 teaspoon turmeric

3/4 pint water

2 to 6 tablespoons Lewis Labs Brewer's Yeast™ Flakes

Salt and pepper to taste

 

Sauté the onion, garlic, celery and carrot in the oil until the onion is transparent, add turmeric and stir in the water. Sim­mer for 30 minutes, stirring occasionally. Remove from heat. Stir in Lewis Labs Brewer's Yeast™ Flakes and seasoning to taste. Add pat of butter to each bowl before serving or serve with "double dumplings" (see recipe). Makes approximately 3/4 pint.


Toppings and Tips

For a tasty alternative on toast mix one teaspoon Lewis Labs Brewer's Yeast™ Flakes with 1 tablespoon of crunchy peanut butter.

For a healthy open sandwich spread one slice of granary bread with butter, layer cucumber, lettuce, grated carrot, cottage cheese and sprinkle with 1 teaspoon Lewis Labs Brewer's Yeast™ Flakes.

A lunchtime snack ‑ scramble two eggs and pile onto two slices of whole meal toast. Mix 2 tablespoons shredded cheddar cheese with 1 tablespoon Lewis Labs Brewer's Yeast™ Flakes. Sprinkle over eggs and place under broiler.

Lewis Labs Brewer's Yeast

Cream of Rice Cereal

4 oz. uncooked brown rice

3/4 pint water (with pinch of salt)

1 teaspoon toasted sesame seeds

1 teaspoon Lewis Labs Brewer's Yeast™ Flakes

Pinch cinnamon

Honey to taste

 

Toast the rice lightly.

Grind until fine in a blender.

Bring the salted water to boil.

Stir in the rice and cook until thick (about 10 minutes).

Drizzle on honey. Sprinkle with Lewis Labs Brewer's Yeast™ Flakes, cinnamon and ses­ame seeds.

Serves two.
